Barrel Aged Son of Toucan Sam Brunch @ Haywood Tavern

Saturday, March 4th we will be tapping the Barrel-aged version of Son of Toucan Sam, a beer brewed in collaboration between Illuminated Brew Works' Brian Buckman and Chef Rodney Staton.

Brian and Rodney share a passion for "old world" beers that rely on nuance, subtlety, technique and yeast. Essentially this is a very traditional bock style beer made entirely with munich malts, continental hops and boiled for 4 hours. Rodney added his "fruity loops" spice blend in modest amounts and IBW pitched their house farmhouse yeast on top of all of this. The result is a beautiful ruby red beverage with understated complexity that drives interest and aids in comfortably long sessions. This version has been aged in red wine barrels for 8 months producing a Belgian Bock with an abv of 7.6%.
