STANDARDS & VARIATIONS are our workhorses and the variations we've made on those. Perennial favorites of ours and the Chicago drinking class, these beers can be found on draft and often in bottles through out the city of Chicago. These offerings are available appropriate to seasonality. A few are available year round.
2-Headed Dog (ABV 5.8%) Extra Special Belgian We've sewn together a British ESB and Belgian Pale Ale with the thread of New Zealand hops to create one extremely sessionable beer built for you to crush all day long. Walk that dog, lest the dog come and walk on you.
Augustus Glooped (ABV 9%) Salted Chocolate Stout We’ve combined rye, roast malts, cocoa nibs and alderwood smoked sea salt and boiled everything for 15 hours to create this rich, black beauty offering you the best dark fruits and deep, dark chocolate in a complex, adult stout that comes on like chocolate cake and leaves without linger.
Black Lodge (ABV 8.1%) Black Abbey Coffee Stout
In tribute to Special Agent Dale Cooper and his hard work on the Blue Rose case, we've added Abacus coffee and sour cherry puree to an 8% stout. Expect coffee in the nose and a silky, clean finish full of fruit. Every day you should give yourself a treat.
The Black Maw (ABV 8.1%) Black Abbey Stout Black licorice and Belgian Chocolate malt combine with creamy milk sugars & abbey yeast in this formidable winter warmer.
Brainwash (ABV 7%) Tart Farmhouse Brainwash glows a hazy, post-hypnotic yellow and smells of mellon, passionfruit, white pepper & grain. The taste is juicy and tart, very much like a wild ale, but it achieves it’s flavor profile simply with water, hops, grain and sachromyces (non-wild) yeast. At 7% Brainwash is efficient at bending the mind, yet it drinks like a beverage half it's weight in booze.
Brown Reason to Live (ABV 6.3%) Belgian Brown Named for the Butthole Surfers first LP, Brown Reason to Live plays two essential characters off one other – Special B crystal & Rochefort yeast – in a surprising autumnal offering with more than a few rabbit holes to chase.
Bulgakhopf (ABV 8.5%) New England Style IPA
Meet Behemoth. He's an unusually large, demonic, talking cat. He loves vodka, chess & syllogisms. And he keeps very strange company. This is a big, hazy New England IPA. It's creamy body is but an ephemeral place holder for the Equinox, Saphir & Amarillo hops as they perform their bidding on your will to joy. Enjoy at night, alone or with friends, by an open window.
Ed's Legs (ABV 6.66%) American Farmhouse Originally made for the West Loop Craft Beer festival, Ed's Legs celebrates fabled Chicago Saloon owner Ed Steinbrecher with a pilsner and flaked barley grist, experimental German hops & our house strain. The culmination is a damp herb & biscuity nose, a creamy mouthfeel with hints of orange and a crackling dry finish closer to champagne than any beer you've had before. Surrender now.
Fnord (ABV 7.3%) Wit FNORD harnesses malted wheat & pilsner combined with American and Noble hops to provide a playground for our yeast to enjoy. The result is a crisp Wit full of complicated herbal, fruit and floral notes dressed in understated wisps of candy and citrus, each working together beneath a rocky, creamy head that helps the medicine go down. If you don’t see the Fnords, they can’t eat you.
Fnord with Abacus Coffee (ABV 7.3%) Coffee Wit We've taken our delicious FNORD and added Abacus Coffee Roasters cold-pressed Guatemalan blend in reserved quantities. The result is a rich coffee forward nose with an almost candy like flavor profile with the coffee and beer playing together to bring forward the fruit notes in both. You've got to put this in your face immediately.
Hasselhopf (ABV 7.3%) Hopped-Up Farmhouse This hazy, hop-heavy beauty combines Columbus, Cascade, Mandarina Bavaria & Amarillo hops with pilsner & Maris Otter grains to create a round, juicy, crushable beverage that’s not afraid to creep you out a bit with its talents.
IBW-25 (ABV 6.3%) Fruited Farmhouse Discover the miracles of modern chemistry with IBW’s homage to Sandoz Lab's greatest contribution to humankind, IBW-25. A pilsner & wheat grist is dried paper-thin laying the foundation for this crushable farmhouse acidified with tamarind & passion fruit. Turn off your mind, relax and float down stream.
Jinx Remover (ABV 5.1%) Brett Pale Ale John Douglas, the beverage manager from the Paramount Room, asked us to create a beer that would pair with their special Wednesday night Wagyu beef burgers. We wanted to make something with a caramel heart and enough acidity to cut through the buttery fat of the burger. Using a tart finishing yeast and a pale ale grist we then blended the base beer with our 100% brett fermented Cult of Ed to help accentuate the floral notes of the dry hopped base. The result is a highly sessionable beer with about four distinct points of flavor, perfect for enjoying with Paramount Room’s delicious burger or enjoying all on it’s own for hours at a time.
Kallisti (ABV 7.4%) Golden Ale
Calypso hops and a razor-thin grist conspire to create a beer made only for the most beautiful.
King Mob (ABV 6.3%) California Common
Named for the anarchist-magician at the forefront of Grant Morrison's "The Invisibles" (who was named for the British Anarchist off-shoot of the Situationist movement) King Mob is an all Munich malt, warm-fermented lager. The higher fermentation temperature accentuates fruit notes, such as banana and apricot, more often associated with Belgian style ales while retaining the clean, dry finish of a lager.
Nabikhopf (ABV 7%) Hopped-Up Farmhouse
Not everything gets better with age. For instance, this juicy, farmhouse style ale made with almost 10 pounds of hops per barrel is best enjoyed while still in the plumb of it’s youth when it’s tropical fruit and citrus notes have been uncompromised by time. And, for a fruit so ripe and bright with flowers, it drinks with a surprisingly sensual smoothness generally reserved for only the most delightful of sins.
Orange Sunshine (ABV 4.6%) Citrus Saison We’ve combined our house yeast, orange and lemon zest and topped it all with experimental German hops. The result is an insanely sessionable beer with the flavor and complexity of something twice it’s weight in booze. The wine-dry, crisp body and delicate citrus notes insure you keep Orange Sunshine close during those long Summer days melting your face under the Chicago sun.
Pazuzu’s Pedals (ABV 6.3%) Farmhouse Porter Be taken by the sinful pleasures of bitter chocolate, coffee, dark fruit, smoke & herb in this homage to everyone’s favorite Babylonian demon and his love affair with the bicycle.
Sex Cult (ABV 6%) Tart Farmhouse Sex Cult is the perfect beverage to pour alongside the bath-salt fondue and catnip jello-molds at your next key party. This tart farmhouse is made with only water, hops, barley, yeast & time while achieving acidity comparable to the best bacteria-born beers. It pairs exceptionally with taboo.
Sly Man (ABV 3.8%) Acidulated Table Beer G.I. Gurdgieff taught about a Fourth Way to Illumination, that of the Sly Man. He is not a monk, a sufi or buddhist. He lives in the city, among the people and his trickster ways can shake a sleeping soul to life. The Sly Man is our silent assassin. Seemingly simple at first glance, but with each taste you will see the kaleidescope of flavors and insinuations opening around you, accentuating your food and elevating your experience into memory. Expect herbs, grains, and a disappearing act for the ages.
Watermelon Gun (ABV 6.5%) Fruited Farmhouse We took our standard Pilsen & Wheat farmhouse base and refermented with 1.5 watermelons for each one of the ten barrels of beer we made. The result is a bright and beautiful ode to the blazing days of summer and the perfect solution for easing those days.
